  • 2020 Blanc de Blancs

    During the 2020 harvest, we picked Chardonnay and Pinot Noir for our sparkling program. After the initial fermentations, we selected our favorite Chardonnay lot to bottle for the inaugural Blanc de Blancs. ENJOY!

    During the harvest of 2020, we picked Chardonnay & Pinot Noir for the sparkling program. After the initial fermentations, we chose our favorite Chardonnay lot to bottle for the inaugural Blanc de Blancs. Under the beautiful conditions of 2020 chardonnay had larger than average, late-maturing clusters.  The elevated acidity level made it perfect for this sparkling lovely sparkling. 
    After the base wine was selected, we hand-bottled 300 cases adding Liqueur de tirage to begin the secondary fermentation. The wine has been aged sur lie for over 3 years. The wines was disgorged and finished in November 2024. 
    As the wine spent the time en tirage the wine developed the perfect expression of fruit – lovely citrus, a touch of lemon and green Granny Smith apple. The sur lie ageing presented us with beautiful toasty, brioche notes – just stunning.  Pair this wine with recipes like buttermilk fried chicken or herb-marinated fried chicken wings. If you’re in the mood for some sweet heat, try pairing it with Korean fried chicken with a soy marinade or a spicy gochujang glaze. Seafood, oysters raw or fried.  For the vegetarian, try tempura vegetables, and if you are in the mood for a snack try some buttered popcorn or tortilla chips and guacamole

    The sparkling is 100% Chardonnay sourced from Stone Tower Estate blocks U/V/W.  It is 100% Clone 4. The sparking has been aged sur lie for 37 months.  The wine has .85 g/L of residual sugar classifying the wine as a Brut nature.

  • 2012 Wild Boar Cellars Sanglier Noble

    Sanglier Noble has been a favorite of our guests and members since our founding in 2009. This is the first time we have crafted the wine since 2016. In French, the word ‘sanglier’ translates to wild boar, thus our ‘noble boar’ is an elegant retranslation of the unique geological structure upon which our vineyards are situated (Hogback Mountain). The refined name is fitting as the wine is sophisticated, polished blend of Cabernet Sauvignon and Merlot. This wine emanates a vivid ruby color with aromas of ripe red and black fruit, black currant, rose petal, The wine is exuberant on the palate with the beautiful fruit and a touch of cedar, clove, vanilla, and a touch of white pepper.

  • 2017 Hogback Mountain

    The wine is comprised of 49% Cabernet Sauvignon, 26% Merlot, 22% Cabernet Franc, 3% Petit Verdot. It was elevaged for twenty months in French oak (52% new). Drink now through 2035

  • 2023 Wild Boar Cellars Cabernet Sauvignon

    Compelling and harmonious wine reflects the best of Napa Valley and Walla Walla

    At our estate, we nurture beautiful Cabernet Sauvignon vines that serve as the foundation of our flagship Bordeaux blend, Hogback Mountain, as well as our reserve single-varietal bottlings. While our focus is on estate fruit, every so often, we discover something truly exceptional beyond our vineyard rows. When we do, we can’t resist the opportunity to craft something unique. The last time that happened with Cabernet Sauvignon was in 2018 – until now. For the 2023 vintage, we sourced fruit from two outstanding regions. The majority hails from the iconic Napa Valley, known for its depth and power, while a smaller portion comes from Walla Walla, Washington, prized for its structure and vibrancy. The result is a compelling and harmonious wine that reflects the best of both worlds. In the glass, this Cabernet shows a deep, dark ruby hue. On the nose, a rich medley of blackcurrant and cassis takes the lead, lifted by a whisper of redcurrant. The palate is smooth and inviting, with soft tannins, a touch of baking spice, and notes of mocha and roasted coffee that add depth and intrigue. The finish is long and graceful, echoing with hints of plum and that subtle mocha warmth. This wine pairs beautifully with bold, flavorful dishes: roasted or grilled meats, beef stew, or Chili Colorado. For plant-based pairings, try vegetable lasagna or eggplant parmesan. Enjoy now, or cellar with confidence through 2030.

    Some of the best advice the Hubers received when starting this project was to “grow what you love” – and we sure do love Chardonnay! It was among the first varietals planted at Stone Tower Winery back in 2009.

It was among the first varietals planted at Stone Tower Winery back in 2009. Today, we have over 13 acres of this world-renowned grape and produce several distinctive bottlings from these blocks. The 2020 Estate Chardonnay is our most precise representation – it is immensely crisp, bright, refreshing, and a brilliant expression of our estate’s terroir.

  • 2025 Wild Boar Cellars Grüner Veltliner

    This wine is pure joy in a bottle. One sip, and you’ll swear you’ve been transported to Austria; then, you will remember with a grin that this bright, zippy beauty is proudly from Lincoln, Virginia, in Loudoun County. It shimmers in the glass with a pale, lively yellow hue. On the nose, it bursts with fresh pear, stone fruit, and candied lime – think margarita vibes with a sprinkle of chalky minerality. The palate keeps the party going: crisp, vibrant acidity leads the way, followed by that same juicy fruit and a pleasantly chalky mid‑palate. As it finishes, pear steps into the spotlight, the acidity softens, and the classic Grüner character lingers with a wink. This is a wildly versatile food wine. It plays beautifully with Szechuan chicken, Pad Thai, bratwurst, grilled halloumi, oysters Rockefeller, charred veggies, and soft creamy cheeses. Enjoy now through 2028.
